Ingredients

  • 1 lb Italian sausage mild
  • 18-20 ounces Fresh or frozen Cheese Tortellini (fresh is best)
  • 2 14.5-ounce cans of diced tomatoes (undrained)
  • 2 48-ounce boxes of chicken broth
  • 8 ounces fresh baby spinach (chopped in bite sizes if large leaves)

Directions

  • In a large pot brown the sausage over medium heat, breaking it apart as it cooks. Drain the excess grease — optional.
  • Add the broth & tomatoes stir, and bring to a simmer.
  • Stir in the tortellini and cook for about 3-4 minutes (fresh tortellini cooks quickly, but if you're using frozen, cook according to the directions on the package).
  • Before you're ready to serve, stir in the baby spinach and cook together until it's gently wilted.
