Ingredients

  • 2.5 lbs of skinless chicken thighs (8-10 pieces) 
  • 1/4 cup olive oil 
  • 2 cloves minced garlic 
  • 1.5 teaspoon salt 
  • 2 teaspoon garlic powder 
  • 2 teaspoon onion powder 
  • 2 teaspoon black pepper

Directions

  • Preheat oven to 350 degrees. Optional (for less mess) line a rimmed baking sheet with parchment paper.
  • Combine all ingredients into a marinade, except the chicken and mix well to combine.
  • Add the chicken and toss to coat.
  • Let this marinade sit for 15 minutes to 12 hours.
  • Place chicken thighs onto the rimmed baking sheet
  • Bake for 50 minutes.
  • Serve with steamed rice or roasted potatoes, piquant hot sauce if you have it and slices of avocado and tomato.
