Ingredients

  • 1 cup unsalted butter melted and cooled
  • 2 tablespoon veg oil
  • 1 1/4 cup white sugar
  • 1 cup dark brown sugar
  • 4 large eggs at room temp
  • 1 tablespoon vanilla extract
  • 3/4 teaspoon salt
  • 3/4 teaspoon instant espresso powder
  • 1 cup all purpose flour
  • 1 cup dark unsweetened cocoa powder
  • 5-ounce roughly chopped dark chocolate (72%)
  • 5-ounce semisweet chocolate chips

Directions

  • Preheat oven to 350.
  • Lightly grease a 8x12" baking pan  with cooking oil spray and line with parchment paper. Set aside.
  • Combine melted butter, oil and sugars togehter in a medium bowl.  Mix with electric mixer or whisk to combine.  Add the eggs, vanilla and beat until light in color ~1min.
  • Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet until just combined. 
  • Fold in the chocolate pieces.
  • Pour into the prepared pan and smooth out the top.  (let your favorite college student lick the spatula and bowl)
  • Bake 30 min until the center of the brownies no longer jiggles and is just set to the touch.  
  • Allow to cool completely prior to removing from the pan and cutting on a cutting board.
