Ingredients

  • 2 large heads of cauliflower, chopped into 1/2-inch pieces (not florets, just small chopped pieces)
  • 2-4 tablespoons olive oil

Cheese Sauce

  • 5 oz cream cheese
  • 2 cups shredded cheese (Mexican blend)
  • 1 1/2 tablespoon dijon mustard
  • 1 cup heavy whipping cream
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 - 3/4 teaspoon cayenne pepper (to taste, we like it spicier)

Directions

  • Preheat oven to 350 degrees Fahrenheit.
  • Place chopped cauliflower on 2 foil-lined rimmed baking sheets. Pour olive oil over cauliflower and toss on baking sheet to coat.
  • Roast cauliflower in oven until slightly browned, about 20 minutes.
  • While cauliflower is roasting, make the cheese sauce. Place all cheese sauce ingredients in a saucier pan (or stock pot). Stir with a whisk until all ingredients melt and combine. Note: Sauce will come together quickly, once it is done, turn off the burner and put the lid on to wait for the cauliflower.
  • Scrape roasted cauliflower into the cheese sauce and stir to combine. Turn the heat back on to rewarm and serve.
